Located in northeast Italy in the region of Veneto. The town of Soave is at some 20 kilometers east of Verona. The vineyards spread around the villages of Soave and Monteforte d’Alpone. The planted areas are divided into three DOCs: Soave, Soave classico and Soave Scaligeri.
[Geography]
The zone for DOC Soave include vast land areas of the west, north and east of the village of Soave. While ordinary DOC Soave includes vineyards on flatlands, hilly outcrops are designated either to DOC Soave Classico or DOC Soave Scaligeri. [Viticulture]
The vast majority of the vineyards are planted with Garganega variety. The other blending varieties include Trebbiano di Soave and Chardonnay. Some growers especially in Classico zones reduce yield to give high intensity of flavour. The soils found here is predominantly of volcanic origin. The dominant variety, Garganega seems show high suitability to the soils as well as to the climatic conditions.
The climate is relatively mild through a year with no extremity in both winters and summers.
Garganega is not a variety of very distinct character but when the yield is cut, denser and riper fruits are achieved.
[Vinification]
Simpler straightforward examples may be fermented and matured in inert vessel. Other richer and denser wine may be elevated by either or both of fermentation or/and maturation in oak barrels. Sur-lee maturation is another possible means used to improve complexity and textural quality.
[Commercial aspect]
According to Isacs(seee reference), Over 90 percent of Soave production is made by large cooperatives.
